Favorite Meatloaf

1 Lb Ground meat (grass fed beef or bison)

1 Onion chopped

½ Green pepper chopped

2 Carrots grated (1 large or 2 small)

1 Egg

½ C Oatmeal

1 t. Thyme

½ t. Cumin

½ t. Oregano

1 t. Sage leaves or ½ tsp ground sage

½ tsp ground fennel

3 T. Soy sauce

Preheat oven to 350

Mix all ingredients together and press into a loaf pan. Bake for 50 min or until well done. Drain extra fat if necessary.

Serves 6-8

I like to make this meatloaf and use the leftovers in spaghetti sauce over brown rice pasta it also makes a great addition to a stir fry. That is 3 meals from one recipe. If you have a large family and wish to use leftovers, I would suggest making two loaves.

Another suggestion would be to make 3 mini-loaves and freeze them from later use.
